Carbon steel used for kitchen knives has long been made in consideration of resharpening. The Oboro Knife series is based on stones made to match Japanese steel and other carbon and semi stainless which are relatively easy to abrade through sharpening.

HOW TO PERFORM FLATTENING AND RESURFACING OF 200 GRIT STONE

  • The first step in establishing bevel geometry for maintained but dull edges

  • ​Removes 200 grit scratches

  • Good for minor chip removal / bevel sharpening

  • Maintenance of the stone's surface during the sharpening process helps to keep the cutting speed of the stone at and optimal level

  • It's important to keep monitoring the flatness of the stone's surface, especially for heavy sharpening like thinning and repairs etc.
